Green Mango Salad
Ingredients
2 unripe green mangoes (green skin and hard to the touch)
2 garlic cloves, minced
2 tbsp rapeseed oil
Juice of 2 limes
1 green chilli, de-seeded and finely chopped
Salt and freshly ground black pepper to season
Method
Peel the mango, slice, cut into thin strips and place in a bowl.
Mix the remaining ingredients and pour over the mango, stir to combine.
Cover with cling film and refrigerate for an hour before serving.
