Rustic Roast Veggies with Chorizo
Ingredients
1 plantain - ripe - yellow skin
1 large sweet potato
1 courgette
3 banana shallots, peeled, halved
2 garlic cloves, crushed
1 dried bay leaf, crushed
2 sprigs rosemary
100g/3½oz chorizo sausage, chopped
drizzle of rapeseed oil
Method
Preheat oven to 200°C / fan 180°C / 390°F / gas 6.
Peel the plantain.
Cut the plantain, sweet potato and courgette into wedges and place in a bowl.
Add the remaining ingredients, drizzle with the oil and mix together.
Roast in a shallow oven proof dish for about 20 minutes until golden and serve.
