Rustic Roast Veggies with Chorizo

A divine combination of roast veggies and chorizo

Ingredients

  • 1 plantain - ripe - yellow skin

  • 1 large sweet potato

  • 1 courgette

  • 3 banana shallots, peeled, halved

  • 2 garlic cloves, crushed

  • 1 dried bay leaf, crushed

  • 2 sprigs rosemary

  • 100g/3½oz chorizo sausage, chopped

  • drizzle of rapeseed oil

Method

  1. Preheat oven to 200°C / fan 180°C / 390°F / gas 6.

  2. Peel the plantain.

  3. Cut the plantain, sweet potato and courgette into wedges and place in a bowl.

  4. Add the remaining ingredients, drizzle with the oil and mix together.

  5. Roast in a shallow oven proof dish for about 20 minutes until golden and serve.
